
This can be a vegetarian dish, or you can add some chicken to make an all in one dish. I'm including our version of gluten free, as well.
Ingredients:
One pumpkin (cleaned and seeded)
Box of prepared stuffing OR
Two cans of hominy (gluten free version)
2 small cans of cream of chicken soup, divided (use gluten free versions if needed)
Shredded cheese
1 bag of frozen mixed veggies, divided.
Directions:
You will be layering your ingredients. In the bottom, place half of the prepared stuffing or 1 can of hominy, then 1 can of cream of chicken, a layer of veggies, then cheese. Layer again a second time.
Place a sheet of tin foil over the top so the pumpkin doesn't burn. Adjust your oven racks to the lowest setting or what will allow ample room around your pumpkin in the oven. You don't want it too close to the elements. Bake at 350 for 2 hours, or until the center is hot.
When served, you can scrape the sides of the pumpkin to add to the flavor of the dish. Enjoy!
